The oil

Cold-pressed from a single grove in Jaén — one of Spain's most significant olive-growing provinces. Clean, grassy, quietly present.

Bhut Jolokia — Sibsagar, Assam

The pepper

Suspended in oil, the Bhut Jolokia behaves differently. Its heat becomes more diffuse. Its smokiness, more prominent. The oil draws out the character of the chilli slowly, in a way that water-based preparations cannot.
